Jill's Yummy Granola


Jill's Granola

Ingredients
8 Cups regular old-fashioned oats (no rolled oats)
1 1/2 Cups brown sugar
1 1/2 Cups Natural, raw wheat germ (I use Bob's Red Mill)
1/2 of a 14 oz bag of Coconut 
1 1/2 unsalted, raw sunflower seeds (I got these in the natural food bulk section of Smith's)
1/2 Cup vegetable oil (not canola or olive oil- those will effect the taste)
3/4 Cup honey
2 teaspoons vanilla
raisins (to taste)

Instructions
In a large bowl, stir to blend oats, sugar, wheat germ, coconut and sunflower seeds. In a small pan, heat honey, oil, vanilla until bubbling (it will start to turn kind of a cream color when it has bubbled long enough). Pour over dry ingredients, thoroughly mix with a spoon then use your (clean :)) hands to make sure the honey mixture is all mixed in. Grease two cookie sheets, spread mix evenly over them. Bake uncovered in a 325 degrees for 15-20 minutes or until coconut is lightly browned. (I had to bake mine for a lot longer- at least 10 minutes longer and I had to stir it to make sure the mixture on the bottom of the pan didn't burn-  the furst time you do it, you just need to watch it to make sure it doesn't burn.) Remove from oven. Stir several times to prevent sticking When cool add raisins, and store in an air tight container.
